The Ultimate Go To Banana Bread Recipe

Who doesn't love a good Banana Bread! This is a Donna Hay Recipe that I been litearlly using for years now, and it never fails! I am known to tweak the odd Ingredient here and there, but I just love finding that go-to recipe. Miss 5.5yrs kindly prompted me to make some Banana Bread last night. Her words exactly " Mum these banana's arnt looking very good anymore, you better make some Banana Bread" LOL She knows just how much I can't stand waste, especially when it comes too food. So don't throw away your rotting Bananas, next time make this awesome recipe.

Banana Bread

Ingredients:
125 g butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups mashed banana
1 3/4 cups plain flour, sifted
1 teaspoon baking powder
1 teaspoon bicarb soda
1 teaspoon cinnamon
1/3 cup golden syrup

Method:
Preheat oven to 160 degrees, grease loaf tin and line with baking baking.Place butter and sugar together and beat with electric mixer until creamy. Scrape down sides, gradually add eggs and vanilla and beat well. Add banana, golden syrup, Add all other dry ingredients into a sifter then mix all together. Cook for around 60 minutes, or until centre is cooked through, allow to cool for 20minutes in the tin and then remove.

TIPS

#1- Always remove the skin and pre chop up your rotting Bananas, place in a  snap lock bag ready to freeze. There is nothing worse, then trying to peel a frozen Banana!

#2- I actually sub the Golden Syrup for Medjool Date Syrup, or any other sweetener is just fine. Honey, Rice malt, Maple Syrup

#3- If you find that your bread is browning too much on top, before the inside is cooked through. Just pop some foil over it, and continue to bake.
