A spot of Saturday Baking
This Tea Cake tastes like one big cinnamon donut! Yum! Who doesn't love a Cinnamon donut! And it didn't last long in my house this afternoon either, a pop in from my Cousin and her partner and its half gone!!
This is a fav of mine that is from my all time favourite cook Bill Granger, from his Cookbook simply bill, named Natalie's Cinnamon tea cake(after his beautiful wife!)
Natalie's Cinnamon Tea Cake
Ingredients:
60g butter, softened
2/3 cups caster sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups plain flour
1 teaspoon baking powder
1/3 cup milk
topping
3 teaspoons caster sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
Method:
Preheat oven to 180 degrees, beat butter and sugar until combined, add egg and vanilla stir together. Stir in the flour and baking powder the add milk and mix until combined.
Pour into a greased tin, bread tin or square 20cm cake tin, bake until golden on top or cooked right through once tested with a skewer.
Once out of the oven, brush melted butter straight over cake then sprinkle with combined sugar and cinnamon.
Serve with a good spread of butter, and a nice cupppa!

As the cousin who poped in with her partner i can definitely vouch for the deliciousness of this tea cake, so much so that i intend on making one (maybe two as my man can easily eat one on his own!) when i get home tonight!
